Coconut Oil
Pure coconut oil manufactured at our own oil mill is used for all cooking purposes. Refined oils, though cheaper, are never used.
Pure Ghee
Only pure ghee is used where fat is required instead of oil. Hydrogenated fats or Vanaspati is never used though it is much cheaper.
Ice-creams from milk
Only real ice-cream made from milk is used for serving ice-creams. Such ice-creams are sourced from Nandini or Amul. Frozen desserts made from vegetable oil/fat are never used.
Pickle
Pickle served with meals is made by us in-house without using any vinegar and served fresh.
Kokum Juice Syrup
Kokum Juice Syrup that is without any artificial colour, preservatives or citric acid is used. This may give inconsistent taste and colour from time to time, but we are fine with it.
Red Label Tea
We use a very high quality tea that is normally used by tea enthusiasts at their homes i.e. Red Label brand tea. It is many times more expensive compared to other teas that gives out more colour easily.
High quality fruits
Fruit shop vendors know what quality of fruits are to be given to hotels vs individual consumers. As hotels bargain for price and individuals for quality. We pay a higher price and bargain for quality. So all fruits that are fresh and adequately ripe are sourced for making juice and milk-shakes.
Local vegetables
Most hotels use only cabbage, beetroot and lowest cost vegetables of the day for making sambar and palya. However we source vegetables that are locally grown irrespective of the cost. As vegetables are an important source of nutrients for us vegetarians and variety of it especially of the local types are crucial for our cuisine.
Kaje Boiled Rice
Boiled Rice used for meals is of Kaje type which is more reddish.
Food colours
No food colours are used for making sweets like Ksheera, Halwa etc though they make the sweets appear attractive.
Caustic Soda
Caustic Soda is used for making only 2 dishes i.e. Mangaluru Buns and Goli Bhaje. It is not used for making any other items.
Essence
There is no use of any artificial essence in any of our food items.
Preservatives
We serve food fresh to customers and there is no need to use any preservatives in storing food products.
Ice cream Syrups/Jelly
We make Gudbud ice cream without using any Jelly or syrups.
