Vision

“Serve traditional Mangalorean vegetarian cuisines using coconut oil”

Vision for Cocoguru is broad i.e. to spread the benefits of coconut to people.  Adigemane just furthers that vision.

Traditional – We take pride in our roots, they are worth preserving for generations to come. They are suitable for our region and culture. At Cocoguru Adigemane we respect them and look to further them. Any other region would celebrate their local cuisine, but it is cool for us to celebrate north Indian, Chinese and western foods. Not saying that they are bad, they are good for their region, fine for us to have them once in a while but only that we should celebrate our traditional local foods.

Mangalorean – Promoters are from Havyaka brahmin community at Puttur and the brand Cocoguru is built from here. We like to focus towards this geographical region, i.e. coastal Karnataka, Konkan coast, Mangaluru, Udupi, Karavali, South Canara, Dakshina Kannada, Tulu Nadu or Parashurama kshetras.

Vegetarian – Non-veg food is the primary food preference celebrated across this region. We believe vegetarian food is good enough for all the taste and nutrition of individuals. We promote only what we believe and consume ourselves.

Cuisine – The business is about food that is ready to be consumed. The food that not only tastes well, but also provides adequate nutrition, prepared freshly and hygienically from the best of ingredients. Most commercial kitchens only focus on taste to appeal to consumers and are extremely unhealthy, known for dirty kitchens, prepared in bulk and preserved, made from the cheapest of ingredients. We saw a deep consumer discontent with it and look to change the way it is done. We like to enjoy the original taste of the vegetables and ingredients by making bland food and not overpower them with salt, spices and extra oil.

Using coconut oil – Coconut oil is (was and should be) the primary cooking oil for this region as this is the land of coconuts. It is one magic ingredient that dramatically enhances the taste of Mangalorean dishes. It is also very good for your health. Restaurants these days hardly use coconut oil because they have found cheaper alternatives like refined oils, find it difficult to source good quality pure coconut oil, coconut oil is not acceptable for visitors from outside this region and food prepared with coconut oil cannot be preserved for long.
